Hidden on the corner of Hanover and George Street is another of Edinburgh's subterranean coffee spots, Wellington Coffee, which channels the Southern Hemisphere's passion for all things caffeinated into a cozy stop-off spot. Wellington does the most with its modest surroundings. Their house espresso comes from formidable London brand Square Mile, who also happen to do a warming, rich decaf, and there's always an interesting guest espresso to tempt the more adventurous — you'll find Edinburgh's own Williams & Johnson here, for instance. Seating is minimal — a couple of tables and some bench seats around the windows — but there's a few other tables outside and up the steps onto Hanover Street itself, if you don't mind bracing yourself against the inevitable Scottish winds (they are here all year round).
Food options are also minimal here, but what they do have is great — huge doorstop scones in a variety of flavours positioned right next to the till, making it very hard not to add one to your order. While Wellington previously offered hot food and greater lunch options, they've scaled back on this to focus on what they do best — the coffee — and judging by how busy it gets, people of Edinburgh are clearly pleased. If you can't get a seat, grab one to go.
