Given the New Town’s proximity to Princes Street, it’s really remarkable how different it feels from the city centre. The beautiful Georgian architecture and wide streets are home to some of Edinburgh’s favourite coffee shops, including Cairngorm Coffee on Frederick Street.

Cairngorm actually have a couple of branches in town, their other being a much larger site in the West End, but Frederick Street was where it began. A small, cosy cafe tucked just beneath the street itself, you won’t find a huge amount of seating, but it’s great for a quick stop as you’re exploring the more touristy spots in Edinburgh. With that in mind, iPads are built into the cafe’s benches with recommendations of things to do handily loaded up already - a nice touch.

Setting Cairngorm apart from the other independents of Edinburgh is their offering of a Chemex brew. Chemex coffeemakers are large, wood-necked pourover devices that make a larger number of cups - in this case, four. The flavour is what you’d expect from a pourover - very clean and pure - but unique in its own way.

Though Cairngorm is principally a coffee shop, It would be remiss not to mention their fine turn in cheese toasties. Excellent sourdough and oozing, melty cheeses are set off by home-made chutneys and chilli jams - these are the cheese toasties that all cheese toasties aspire to be.
