Just off Carlton’s main artery of Lygon Street you’ll find some amazing specialty coffee and tea from AssemblyStore. Now roasting their own through The Bureaux Collective, Assembly offer some very tasty single origin coffees, using the super accurate EK43 for all grinding, espresso and filters, and also rotating a guest roaster for selection purposes.

A main theme and point of difference here is that there is also a vast selection of single origin tea sourced by the people at Assembly themselves, from floral or creamy Oolongs to clean and fragrant Jasmine pearls, a pleasant and soothing addition to the standard café fare.

The store is split into two sections by a thin wall of retail equipment, beans and leaves for sale on either side. On one side, there is inside seating for espresso-based drinks and a window for quick takeaways outside, or just say hello. On the other side, a clean and impressive brew bar sits below a distinct neon sign for filters and tea with a bench for conversation and a view of you brew being dialled up – relax and enjoy.
