Bien Cuit — Cobble Hill
120 Smith St, Brooklyn, NY 11201, USA
Editor's Review
Bien Cuit, meaning "well-done" in French, is in reference to the dark, caramelized crust on this bread bakery's loaves, along with their meticulous approach to baking. Bien Cuit is backed by an all-star team, whose co-owner Zachary Golper was nominated for two Best Baker awards by the James Beard Foundation after opening the space in 2011. The team bakes and serves every day out of their Smith Street location, whose environment makes for a classic bread bakery experience in the charming yet bustling neighborhood of Cobble Hill. Exposed red brick and dim spotlighting adds a tone of New York to the rustic notes of this bread bakery, and the quaint hidden garden patio serves as the perfect quiet getaway.
Come in for a variety of tartines made from their 15 different bread selections or simply grab a loaf to go. The kitchen is well-stocked with small-batched baked breads, along with a wonderfully overwhelming selection of pastries, cookies, and other desserts made in-house, but only through the end of the afternoon since goods are made fresh daily. Be sure to pair your carbs with a trusty selection of roasts from Irving Farm, or take a peek at the stacked tea menu from Harney and Sons. Non-dairy alternatives include soy and almond.
