For those looking light roasted coffee in Denver, Huckleberry should be one of the first places considered. Following in more of an Americanized version of the Scandinavian tradition—which is to say, not quite as light as typical Scandinavian roasters but still lighter than what is found elsewhere in American specialty coffee—Huckleberry’s coffees are made with the filter drink in mind. But that’s not to say their espressos should be passed over. One the contrary, their espressos have a lighter body than those of other cafes, allowing for the juicier and tea-like notes of their generally African-heavy single origin offerings to shine without being over-acidic or cloying.
