The very first of the Sensory Lab stores, and the first time high-end retailer David Jones has collaborated and gone into a partnership with another brand (Sensory Lab now roast all coffee for David Jones). The Lab is located inside the retailer on the Little Collins end, facing out onto the street. There is plenty of seating inside but also some out on the small terrace-like front area by the take-away window. "Talk to me", which is written on the window, highlights the focus on quality and education, enlightening customers about traceability, from source to their hand.

This is a great spot to sit outside on a nice day and people watch. The baristas here are of the highest standard as you would expect with the reputation of both Sensory Lab and David Jones, and are full of useful information about all the coffee on sale. The venue serves up espresso, filter, and tea superbly, showing the full potential of the roasted beans on offer.

In the heart of the city, you’re not far from amazing street art, beautiful laneways plentiful with international cuisines, scenic atmosphere, and European vibes. If you're ever in the middle of the city, this is the place to go for coffee, and you just might learn something new.
