Brewing this month: Colonna Coffee - Gran Galope, Inzá, Colombia

The aim of Colonna Coffee is to set up a roasting and sourcing company which, “curates and presents incredible coffee”. Not only does Colonna want to roast fantastic coffee but they also want to make it more accessible for you to brew and produce better quality coffee at home. Their goal is, “to think big, to wonder how good coffee can be, to wonder how we can innovate to achieve this.”

This month we are brewing a delicious single-origin coffee from Colombia, called Gran Galope, Inzá, from the Cauca region. This coffee is part of Colonna's Foundation genre. Coffees in the Foundation genre are balanced, clean and complex — with low bitterness and pleasing acidity. Flavours like these can only be achieved by growing the right coffee in the right place, with meticulous attention to detail during the harvesting process.

Colombia's dynamic and varied coffee offerings are due in part to the origin's vast array of microclimates created by the country's unique geography — perfect for the cultivation of specialty coffee.

The Cauca region on the western coast enjoys such conditions with smallholder farms grouping together to grow Castillo, Caturra and Colombia varieties. These are then cupped and selected in the nearby town of Popayán.

A quintessential Foundation coffee — this washed lot is sweet and tangy, with notes of orange, cherry and chocolate.
