Peak Water: Optimising Water for Coffee

Bath, the home of the infamous Roman Baths – famous for its healing waters – and now the birthplace of Peak Water, soon to be famous for its revolutionary contribution to coffee brewing.

Peak Water comes from a collaboration between a ground-breaking barista, Maxwell Colonna-Dashwood, and coffee addict chemist, Christopher H. Hendon. Their book, Water for Coffee, became a tome for coffee enthusiasts who wanted to perfect their brewing. It was so popular that the first edition has sold out, and they are now working on the second edition, which promises to be slightly less scientific though equally as informative.

So, what exactly is Peak Water? In layman’s terms, it’s a jug that filters water specifically for brewing coffee. Unlike other filtration jugs on the market that were originally designed for better drinking water, Peak Water is firstly a jug for optimising coffee brewing water.

The science is in the filter. It is a multi-disc filtration system, which uses a maze to ensure that the water runs through the entirety of the disc. The setting you choose (determined by the results of the test strip that comes in the starter pack) will determine how many layers of the filtration system your water passes through. Basically, the filter tailors the mineral content to your tap water (mostly controlling the bicarbonate) and maintain a stable pH.

They have managed to achieve an amazing 94% of their target in the 11 days since it launched.
